ALLRECIPES SOUTHERN ROUND-UP 2014

PANAMA CITY BEACH FLORIDA!

Well the saying I need a vacation to recover from my vacation is more then true. My backside is dragging for sure. I have spent this week so far getting my house back in order, doing double the laundry I normally have, picking the garden
and  preserving everything I picked. Like I said I need a vacation.
Our primary destination so titled because we had one more final stop to make before we would head north and home. Panama City Beach FLA ! What a beautiful place to visit. It is exactly what I had hoped for, exotic, blue skies, warm water, and white sandy beaches.

We lucked out and had a week of perfect weather to enjoy all that the beach has to offer. We did and saw so much without leaving our hotel on the beach.
We did leave the hotel and beach here and there to have fun hanging out with our Allrecipes friends. The whole purpose of vacationing in Panama City Beach was to join the Redneck Southern Roundup. While the beach alone would have been worth the long ride we took, meeting and re-meeting these people loving known as Allrecipes Peeps was the icing on the cake and a bowl of ice cream too.
Our first stop after checking in was
to a seafood bar not far down the road for our first greet and meet. We were all fast friends with in 5 minutes of meeting each other.

After our meet and greet the hubby and I settled into our room looked around at all the wonderful things to do and see and then with smiles on our faces we fell asleep dreaming of blue skies and warm days on the beach.
All the days blurred into each other as we lazed about on the beach doing nothing but relaxing. My beach hating husband had more fun playing on the beach than some children I know.

Mom and I enjoyed the beach as well.We even got a day on the beach with some of the AR peeps.

Gary and his wife were lovely  host and hostess fixing us all dinner one night and hosting a very enjoyable evening gathering that included a beautiful sunset and a whole lot of Flamingos as well as some outrageously funny re-gifting.

Look closely and you will see a flamingo or two photo bombing my pictures.
Hubby and I took one walk into the shopping area near the beach enjoying the sites and sounds.

It was nice to have lunch with a live band for entertainment. I thought the use for the old claw foot tub was great.
Our last night in Panama found us all together for one last dinner. The restaurant was warm and friendly with great food. Ideal for a leisurely dinner with good friends.

No the Hawaiian shirts weren’t planned just a happy coincidence.
Not overly eager to leave on Friday I grabbed my camera and took one last walk on the beach. Dzia Dzi was more then happy to mug for the camera in the extremely large chair.

Then sadly it was time to leave, but not before Robin stopped by to surprise me with a souvenir gift made by her from her heart. I had seen something in a gift store and she had noticed me admiring it.

So before we left she showed up with my very own bottle of sand and shells. It now sits dead center on the shelf in front of me making me smile everyday.

This was a well seasoned dish that I decided to do in the slow cooker on a Sunday. Delicious and so easy! I plan to use the leftovers for loaded nachos for appetizers later this week! I can’t wait!

APPLE Vs. PUMPKIN… Baking with SPLENDA®

Did I mention…I AM NOT A BAKER!  However, these recipes are probably the prettiest I have ever baked…I impressed myself! And so easy! I baked both with SPLENDA®granulated sweetener. I have 2 friends who are diabetic but who love their sweets. Both these desserts fit the bill. Potatoes Anytime!….That’s My Motto, Ore-Ida®

OLYMPUS DIGITAL CAMERA I cook every night but sometimes I get a hankering for something but I just don’t know what I want to eat….we’ve all been there. Hungry, but you just don’t know what you are hungry for…yep, that feeling!  I keep at least one bag of Ore-Ida® tater tots, crinkle fries, or hash browns in the freezer for times like that!

Let me show you some of the recipes I found this month to satisfy those hankerings!

I had eaten a late lunch and just wasn’t hungry for dinner BUT I was nibbly. So here is a quick and easy recipe to satisfy the nibbles! Cheese and Bacon on Fries…cannot go wrong there! YUM!

AUTUMN—Great Time for Johnsonville® Sausage!

As the weather get a little cooler, there is nothing like having a warm home style pasta dish for dinner!  I always keep sausage in my freezer and I really love the spicy hot fresh sausage from Johnsonville.

The following recipes I made this past month were easy and can be made within 30 minutes.  Add a green salad and some garlic bread and you have a great hearty meal!  All of these recipes, heat up perfectly the next day for lunch (if you have leftovers…unlikely), BONUS!

BISON For Dinner Anyone?

My Husband was from North Dakota so we spent at least one vacation per year visiting family in North and South Dakota over the past 20 years or so. I have gotten to see buffalo as they graze on the prairies and hills in Custer Park and the Theodore Roosevelt National Park. You drive thru the parks and often have to wait for a stubborn buffalo to move out of the road so we could continue on. I have had Buffalo Burgers several times on our travels and always enjoyed them. So when I was offered a chance to make a meal with Bison I signed up right away! Buffalo is a very lean meat, not very strong tasting but flavorful. I do not find it gamey tasting at all and I think if you didn’t tell anyone what it was, I don’t think they could guess that it was BISON!

FALL IS HERE…TIME FOR HOMEMADE BEAN SOUP!

I have sold my house in Kentucky and have moved to my new home in Titusville, Florida, closer to my family. Although I have lived in Florida for 35 years, grew up most of my life here, I have been gone for 15 years. I think the hardest part of adjusting will be missing the seasonal changes of up North. It’s the first week of Fall and it’s still hitting 90 degrees here in the afternoon! Palm trees don’t change colors in the Fall so I am missing all the colors of the autumn  leaves of KY! And I have been craving homemade bean soup….at least my taste buds can get a little taste of Fall!

As an ALLRECIPES BRAND AMBASSADOR, this month one of our activities is to create a personal recipe for Al Fresco Chicken Sausage. I have used this sausage in the past and was pleasantly surprised about how tasty it is, especially the fresh sausage! Sometimes, the selection of flavors is limited in some grocery stores because this product is so new but I was happy to find a new flavor that I hadn’t seen before!Image

ALFRESCO BUFFALO CHICKEN SAUSAGE!

Since bean soup can be pretty bland, I decided to brighten up the flavor with this spicy sausage! I decided to remove the casings and just saute the meat into crumbles to add to the soup which was very tasty. This sausage is quite spicy so if you have small children or others sensitive to spicy foods, you may want to reserve the crumbles and just add it into the hot soup to those who can handle the heat! You could also use other flavors of AL FRESCO sausage, like the Sweet Italian Chicken sausage and I think it would work just fine!
